In many programs, you can do a file -> Save As . . . and choose the file type option at the bottom of the window to choose a different format. Unfortunately, Adobe Acrobat does not have that option.
So, option 1: Rescan the image, this time modify the scanners settings to use a jpg format instead of PDF (usually on the scanner itself if it's relatively new).
Option 2: If you have an Adobe product, such as Photoshop or Fireworks, you can open the file in that program, and go to File on the menu bar and choose save as and choose jpg from the save as type menu at the bottom.
